Ingredients:
2 cups | 410 gr. uncooked sushi rice
2 1/2 cups | 625 ml. water
1/2 cup | 125 ml. sushi rice vinegar mix (store-bought and ready to use)
250 gr. block of tofu, drained and patted dry
1/3 cup | 80 ml. water
3 tbsp lemon juice
1 tsp maple syrup
1/2 tsp sea salt
1/4 tsp garlic powder
2 tbsp capers, drained and roughly chopped


Instructions:
  • Rinse the rice in a strainer or fine mesh sieve until the water runs clear.
  • Combine rice with water in a medium pot.
  • Bring to the boil, reduce the heat to low, cover and allow to cook, unstirred, for 20 minutes.
